Green Bean, Chick Pea, Barley and Feta Salad

Ingredients
- 8 oz green beans, blanched
- 1 C uncooked barley, cooked and cooled
- 15 oz chickpeas, rinsed
- 4 oz feta
- 2 T dill, chopped
- 2 T lemon juice
- 1/4 C olive oil
- 2 T white wine vinegar
- 1 t Dijon mustard
- 1 t coriander seeds
- 1 t cumin seeds
- 1 t fennel seeds
Instructions
- Whisk together the olive oil, vinegar, mustard, and lemon juice, then mix in the coriander seeds, cumin seeds, fennel seeds, and dill, then season to taste.
- Toss the beans, barley, and chick peas in the dressing.
- Plate and serve chilled.
